Here are some recipes  and ideas that make quick meals, cheaply.  (In random order)

Many of these recipes are listed with ground turkey, because it usually is cheap if you shop around.  If you wish you can substitute ground beef, but remember to drain it after browning. You can use any ground critter you like.

"If you can stand the meat, then get out of the kitchen"
Someone
must have said this.

Gourmet Coffee

Add 3 shakes of Cinnamon or a few drops of you favorite extract to the coffee grounds in your coffee maker.  Stop paying 10 bucks per pound.

Buffalo Style Chicken Wings

Get a bottle of "Franks" Hot sauce and a bottle of Creamy Blue Cheese salad dressing.  Fry or bake chicken wings (Fried tastes better)

For hot wings, coat with hot sauce
For medium wings, mix hot sauce with equal amount of melted butter

For mild wings, use mostly butter

Cut up some celery sticks to dip in the blue cheese

Dip wings in blue cheese as needed

I have seen many screwed-up recipes for "Buffalo Wings".  This gives you a very close approximation o the original recipe used at the Anchor Bar in Buffalo, NY (Where they were invented). The anchor bar had a secret recipe for their blue cheese dressing, but most bottled dressings come fairly close.  The hot sauce cuts the bitterness of the blue cheese.  The blue cheese softens the heat of the hot sauce.

Barbecue Sauce

Buy the cheapest Barbecue Sauce you can find.  Add 2 teaspoons cider vinegar, 2 teaspoons sugar and 2 tablespoons water.  Heat in a saucepan to blend flavors.

Kids Favorite:
Macaroni & Eggs (Sounds Weird, But Really Delicious)

After cooking (or using leftovers) macaroni (elbows), fry macaroni in butter or margarine.  Keep turning to avoid burning.  Scramble 3-4 eggs per pound of pasta in a cup.  Add eggs to frying pasta. Add salt & pepper to taste.  Cook until eggs are done, stirring constantly.

Variations:  Use leftover macaroni and cheese.  Add ham, bacon or sausage.

Spaghetti and Meat Sauce:

1 pound roll ground turkey (frozen)
one medium onion
Garlic powder
Onion Powder
Oregano
Salt
1 can of Hunts or Delmonte Sauce (Usually the lowest priced sauce)

Place pot of water (for spaghetti) on stove, high heat
Thaw ground turkey in microwave on high for about 3 minutes.  (Don't forget to cut off metal clips on tube first)
In saucepan, brown turkey, onions, add spices to taste
When meat is cooked, add can of sauce.  Simmer till spaghetti is cooked.
Water for spaghetti should be boiling by now, add pasta, cook according to directions on box.
Drain pasta ,mix with meat sauce.  That's it a meals that can feed 4 adults (or more) for a little over two bucks total.  (Based on prices around here)

Meatballs

1 pound Ground Turkey (thawed in microwave w/ metal bands removed)
1 1/2 cups breadcrumbs (or if you have a blender, make your own)
one medium egg
one small onion (chopped)
Garlic Powder (few shakes)
Onion Powder (")
Oregano (few shakes)
1/2 teaspoon Salt
1-2 cans spaghetti sauce

Mix all ingredients with a strong wooden spoon or by hand.
Shape into meatballs by rolling between palms of hands.  (I like mine about 2" in diameter).  If you can does this quickly and gently, it leaves crevices on the surface that hold sauce.  Try not to make a smooth round ball.
Cook by frying (turning often), baking (about 400 degrees for 25 min), or even in a covered microwave dish on high (5 minutes at a time till well done)
Slow cook meatballs in sauce for at least 45 minutes.
top favorite pasta, or make a meatball sandwich or sub.

Italian Sausage

1 pound of Ground Turkey (Thawed in microwave 3 minutes with metal clips removed)
1/2 teaspoon salt
crushed red pepper
1/2 teaspoon fennel seed
black pepper

mix meat, salt, a few shakes of red and black pepper, fennel right in the pan.  Let sit a few minutes for flavors to blend.  Fry, while continuing to chop with spatula for crumbled sausage.  For patties:  Form before frying and don't chop them up

.

The chopped sausage can be used with sauce for a sausage flavored meat sauce.  It can also be used a a topping for pizza.

Sloppy Joe's

1 pound of Ground Turkey (Thawed in microwave 3 minutes with metal clips removed)
1 medium chopped onion
1 medium chopped green pepper
Garlic Powder
Onion Powder
1/2 teaspoon salt
1 Tablespoon flour
1/2 cup ketchup
1/4 cup water

Brown meat and onions and green pepper with spices, chopping with spatula.  When brown, add flour, continue mixing for 2 minutes. Add water and ketchup.  Simmer till thick (About 5 minutes).  Serve on bread or Hamburger buns.

Stuffing -  Tip #1 Use Bread, don't buy stuffing cubes!  You can even save your stale bread (As long as it hasn't changed color).  I like using a loaf of wheat bread.  I lightly toast the whole loaf on a cookie sheet.  You can overlap the slices.  It doesn't matter if not all of the slice is toasted because it is not exposed to the heat.  Usually when you make stuffing, it's for something you're roasting, so you're not wasting energy by just making toast.

My favorite stuffing recipe:

Optional: Homemade pan sausage
Thaw 1 lb roll of ground turkey in microwave for about 3 1/2 minutes on high.  In Stuffing pot mix turkey, 1 teaspoon salt, 1/4 teaspoon black pepper, a few shakes of Cajun Seasoning (optional), 1-2 teaspoons sage, 1/2 stick butter or bear grease (whoops, margarine).  Just keep chopping and mixing with a spatula while the meat browns.

Just continue from here, but you don't need to add any more butter.  Although I think it tastes better.

1/2 stick margarine or butter
1/2 tsp. salt
1/2 tsp. thyme
1/2 tsp. oregano
1/2 tsp. dill
1 med. onion
2 stalks celery
appropriate soup base or 1 small can of stock (Pork, Chicken, Beef, Turkey)
water

Chop up the celery and onions while melting the butter (don't burn the butter) and toss them in.  If there is sausage in the pan, toss them in anyway.

Add Thyme, Oregano, Dill, Salt.  While cooking, keep tossing the mixture to keep from burning or sticking.  Cook until onions are translucent.

Add about a cup of stock or water with 2-3 tablespoons of base. Simmer for a few minutes.  Break bread into chunks and toss that in too.  Shut the stove off.  Add a little water at a time, while chopping with spatula and stirring until the stuffing is of your desired consistency.  If you add too much water, you can dry the stuffing in the oven on the cookie sheet you used to toast the bread.

Let it cool a while if you are going to stuff something with this, or you can just eat it as is.
